Egg Curry Recipe
PREPARATION TIME- 10 mins
COOKING TIME - 30 mins.
INGREDIENTS
For Bhuna Masala
1. Cumin seeds
2. Red chilli - 4
3. Black pepper
4. Cinnamon - 1/2
5. Green cardamom - 2
6. Coriander leaves
7. Fennel seeds - 1 teaspoon
8. Nutmeg (jayfal) h- 1/4
For curry
1. Eggs - 4-6
2. Onions - 4 medium size (thin slices)
3. Ginger garlic paste - 1 teaspoon
4. Tomatoes paste - 2
5. Kashmiri red chilli powder - 1 teaspoon
6. Bay leaves - 2
7. Salt
8. Turmeric - 1/2 teaspoon
9. Kasuri methi - 1 teaspoon
10. Cooking oil
METHOD
For bhuna masala
1. To make powder, take a pan and add coriander leaves, green cardamom, black pepper, cinnamon, fennel seeds, nutmegs, red chilli whole. Roast all the spices on medium flame till they get a slight aroma.
2. Turn off the flame and leave the spices to cool for a while. After it cools down, make a powder of it in the mixer.
For curry
3. Before frying the eggs, make a slight cut in them so that they don't break while frying. Now sprinkle some salt and red chilli powder and mix them.
4. Heat 2 tablespoon oil in a pan and fry the eggs till they become light brown. Now take them out in a plate.
5. Heat 2 tablespoon oil in the same pan and add cumin seeds, bay leaves and sliced onions. Fry the onions till it becomes light brown. Saute ginger garlic paste.
6. Now pour tomatoes paste and saute on low flame. Add red chilli powder, turmeric and bhuna masala and mix well. Roast the spices well.
7. When oil starts to separate, pour some water. Add salt as required and cover the lid for 5-8 mins.
8. Add kasuri methi and turn off the flame.
Serve the spicy egg curry with rice!
