Egg Fried Rice Recipe
PREPARATION TIME - 10 mins.
COOKING TIME - 20 mins.
INGREDIENTS
1. Boiled Eggs - 4
2. Basmati rice - 2 cups
3. Thin sliced onions - 2 big
4. Ginger garlic paste - 1/2 teaspoon
5. Dry spices - (Cinnamon, Cloves - 2,
True cardamom - 1, Black cardamom - 1, Cumin seeds, Bay leaves - 1 , Black pepper )
6. Salt
7. Turmeric - 1/4 teaspoon
8. Coriander powder - 1/4 teaspoon
9. Garam masala - 1/2 teaspoon
10. Kashmiri red chilli powder - 1/2 teaspoon
11. Ghee/ butter - 1/2 tablespoon
12. Green veggies ( beans, carrot, capsicum, green chilli)
13. Cooking oil
14. Coriander leaves
METHOD
1. Clean the rice and set aside. Heat oil in a pan and slightly fry the eggs.
2. Heat oil in a cooker. Add all the dry spices. After it turns slightly brown, add onions and saute till it turns brown too. Add ginger garlic paste, chopped veggies and fry well.
3. Add salt as per taste, turmeric, coriander powder, garam masala powder, kashmiri powder, 2 green chillies, 2 tblspoon ghee/butter and mix well.
4. Now add water. Add the fried eggs and cover the lid. Turn off the flame after one whistle. Open the cooker after whistle cools down. Garnish with coriander leaves.
Serve the healthy egg fried rice!
